When life throws you lemons: ‘squeezing’ the most out of it

Our neighbors own a second home in the Phoenix Valley. This past winter, they transported bags to the mountain teeming with sunshine-yellow lemons from their backyard. It gave me a pang of homesickness and the four citrus trees we once had. But when they offered me a share of their haul, it was like accepting a small taste from our former life. I squeezed and froze the juice and zest. And then I baked the most scrumptious lemon blueberry streusel bread for a mother’s day treat.

Lemon Blueberry Streusel Bread

Ingredients:
Bread
¾ cup granulated sugar
½ cup milk
½ cup oil
1 large egg
1 teaspoon lemon, vanilla or almond extract
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
1 large lemon—juice and zest
1 tablespoon all-purpose flour
1 ½ cups blueberries fresh, or frozen and thawed

Streusel
3 tablespoons butter, melted
½ cup granulated sugar
½ cup all-purpose flour
