The ‘fruit’ of our labor: what happens when we give up too soon
A couple weeks ago, we invited our neighbors over for dinner and I tackled a new dessert recipe. I realized that was risky business, especially if it flopped, with the nearest store a minimum of 1½-2 hours roundtrip. Although I encountered a couple glitches, I’m grateful I improvised because it ultimately received raving reviews. I wonder how many times in everyday life I’m guilty of giving up too soon because whatever it is doesn’t meet my expectations, instead of pushing through until I see the “fruit” of my labor—in this case blueberry coffee cake—especially when the end result typically turns out better than I hoped. And since I’ve received several requests for the recipe since posting a picture online, I’m happy to share it below.

Ingredients:
Cake
Nonstick cooking spray
1 cup all-purpose flour
1 cup whole-wheat flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
